EXTRA PALE ALE | 4.2% | AZACCA, CITRA, SIMCOE - Sometimes you just want a beer that is mega sessionable. Our Core pale ale is delicious, hazy juicebomb of a beer, balanced with enough bitterness to keep drinkers coming back for more. A baby version of our incredibly popular Spur IPA - Floret is positively bursting at the seams with peach, mango, and pineapple notes, backed up with pithy orange peel from its Citra, Simcoe and Azacca hop bill.

PALE ALE | 4.1% | NELSON SAUVIN BLISS - There’s a common misconception when it comes to the more sessionable pale ales; that because of the lower ABV we have to sacrifice flavour intensity, or that we use lesser hops in the more sessionable end of the brewing spectrum. This couldn’t be further from the truth and Infinite Source is a gleaming example of this in action. Fresh cropped Nelson Sauvin would be enough to qualify for this on its own, but we’re never ones to do things by half here at Polly’s. Featuring the Bliss blend exclusive to Freestyle Hops, this incredibly high-alpha variety features a blend of late and early harvested Nelson Sauvin to maximise tropical intensity, and bring all those gooseberry, lychee and grapefruit notes fully to the party. The result is a robust, dank and complex hop-forward beer that punches way above its ABV.

PALE ALE | 5.7% | CITRA PRYSMA, CITRA BBC, ENIGMA - We’re all about the latest and newest hop technology landing here at Polly’s HQ whenever it breaks from our hop merchants. Prysma was first floated to us at the back end of 2025 and our brewers were positively giddy to utilise it on our beers - a liquid hop product developed over time by the wonderful Barth Haas to infuse intense and potent hop aroma and flavour without any of the harsh bitterness that can occasionally come from using such products. Utilising the Citra variety of this liquid hop, this pale ale absolutely sings with fresh orange, pink grapefruit and lime notes, before a pellet addition of Australian in-house favourite Enigma brings white grape, raspberry and cantaloupe flavours, balanced with a very gentle addition of hot-side Citra BBC to impart a whisper of underlying bitterness for balance

PALE ALE | 5.8% | CITRA, SABRO - Our last collaboration before the 2020 lockdown with our super pals over at Big Mountain Brewing, and a surefire cult favourite takes its rightful place as the pale ale showing for our new Icons range. We've revisited this beer several times over its lifespan, and originally our first foray into using everybody's new favourite hype hop Sabro in one of our beers, we're now world-weathered in the little quirks and idiosyncrasies of this incredible varietal. Amplified up to the max, Sabro brings a metric tonne of sweet, creamy, pineapple and coconut notes before being reeled in by an in-house Polly's favourite in Citra to keep everything balanced. Named for a truly terrible George Takei impression, this beer will literally make you say "...Oh my!".

PALE ALE | 5.2% | DOLCITA PRYSMA, DOLCITA, SABRO LUPOMAX, SABRO - We’ve done some pretty special combinations when it comes to hops here at Polly’s over the years, but it honestly astounded us that a combination that had evaded us was pairing everyone’s new favourite hype hop Dolcita with one of the most hotly debated hop varieties in Sabro. Never one to do things by halves, our head brewer Joe has brought his usual flourish to drive the hype train, with both hops represented by their classic T90 iterations, but to squeeze every last ounce of flavour out of this beer, we’ve also brought Dolcita in its Prysma form, and Sabro in its Lupomax form to create a pale ale positively dripping with creamy coconut, mango, peach rings, candied pineapple, tangerine and tropical fruits. A certified banger, and a perfect introduction for these incredibly fruit-forward hops to meet eachother for the first time in a Polly’s beer.

LAGER BEER | 4.7% | SAAZ, HALLERTAU MITTELFRÜH - When we were looking to expand our core range, we analysed what it was that other breweries had in their arsenal and it became obvious to really do a core range well, we’d need a lager as part of our output. Stripping things entirely back to basics with our effort, Pilsner is a straight up, no frills lager; brewed in honour of those incredible German and Czech styles that we treat as a reward for ourselves after a long week at the brewkit. A very simple grist bill imparts biscuit sweetness to play off a noble hop addition of Mittelfruh and Saaz to honour those aforementioned Czech and German masters for a pilsner that is crisp, clean, and delightfully moreish.

OAT CREAM IPA | 6.3% | VANILLA, DOLCITA, TALUS, LACTOSE - You know how some things just work together? The same way Lennon was supposed to meet McCartney, and the way you couldn’t imagine anyone except for Chewie sitting next to Han in the Millenium Falcon, sometimes a hop is just destined to be paired with a certain beer style, and we’ve found that unbreakable bond between Dolcita and our Oat Cream IPAs. Thick, pulpy, and pillowy to the max, Sundown Theory utilises a huge amount of cold side Dolcita to impart a metric tonne of peach rings, caramelised pineapples, and sweet valencia oranges. We’re responsible enough to know that we can’t let a beer wander into cloyingly sweet territory here at Polly’s though, so we’ve accentuated this with a whisper of Talus to bring a balance of subtle pine resin and grapefruit to the party. A beer that was just made and custom built for summer time.

INDIA PALE ALE | 7.2% | AZACCA, CITRA, SIMCOE - Spur has always been a massive in-house favourite here at Polly's, and the proof is in the pudding - the hop bill of Azacca, Citra and Simcoe bounces with Um-Bongo levels of tropical flavour, featuring a full on fruit salad of papaya, peach, tangerine and mango on both the nose and flavour. The scrappy medium child of the original Augment trio - a nightmare to can on its first go round in 2019 on the back of how highly hopped it was - we've tamed this awesome beast and brought it into our Icons range as a permanent fixture. Slathered with our bespoke in-house LA3 yeast culture for massive hop suspension, this is a beer that is 100% hazy, dank, and juicy. Spur, it's good to have you back for good.

ANTIPODEAN VANILLA IPA | 6.0% | NECTARON, GALAXY, RIWAKA - It would be no great statement to say our owner Sean has seen an injection of ingenuity since the concept of utilising vanilla in our beers landed on his radar. The ability to replicate those ultra-pillowy New England IPAs that set off that initial spark of inspiration that birthed Polly’s in the first place has been a white whale we’ve been constantly chasing throughout our eight years, and this innovation, whilst not being the first brewery to utilise it, is certainly setting our beers to the next level. Wanting to keep things purely south of the Equator on this beer, we’ve gone with an all-South Pacific lineup of in-house favourite Galaxy, with NZ titan Riwaka, and everyone’s favourite hype hop Nectaron for an IPA that balances that fine line between thick, pulpy juice sweetness, and underlying bitterness that reminds you this is a beer, and a big Polly’s beer at that.

TRIPLE IPA | 10.0% | CITRA, EKUANOT, GALAXY, MOSAIC, SIMCOE - Overwhelmingly popular every time we've brewed it previously, each incarnation of the headline act of our original three has progressively gotten better and better, and we've spared no expense on this return to its amplified version either, brewed  by our owner Sean on the Pilot Kit. Featuring an insanely high dry hop charge - we've loaded this version of our most well-renowned beer with an extra heavy lashing of Galaxy alongside its superstar lineup of Citra, Mosaic, Columbus and Ekuanot, just to give it that little push into the stratosphere. Our favourite DIPA to brew, nudged up to TIPA strength, Rosa blooms with a bouquet of everything dank and juicy.

SOUR | 6.5% | LEMON, VANILLA, LACTOSE - What is the best kind of dessert? It’s obviously got to be sweet, but with a sharpness that awakens the senses at the same time. The latest idea that has found its way to our pilot kit is a decadent one, and a beer that we feel is the perfect example of a pastry sour that doesn’t need an instruction manual attached to it to get it out into the glass. Utilising a super-biscuity grist bill to act as the base to this beer, we’ve brought an absolute tonne of fresh hand-scraped vanilla, a hearty lashing of lactose to bulk up the creaminess, and fresh sicilian lemons for an ultra bright zesty spark to replicate the very humble (but delicious) cheesecake that inspired this incredible beer.

BEST BITTER | 4.0% | WOLF AND DRAGON - In case anyone hadn’t already noticed, we’re big suckers for nostalgia here at Polly’s Brew Co. We’ve showcased that thirst for nostalgia by working with a brewery that has existed on our radars long before Polly’s existed, stretching back to the days in which a considerable amount of us all worked in our own bars and restaurants, serving beers from the understated but magnificent Brimstage Brewery. Quietly making some of the best cask beer we’ve had the pleasure to try, we decided to bring our collective expertise together to brew a heritage style and a celebration of our formative drinking years - Shifting Plates. Kicking it very old school and utilising full leaf Styrian hops, this beer leads with the malt to give a warm hug of nostalgia, but with a bright and pleasant fruitiness in a thoroughly modern best bitter.

BREAKFAST STOUT | MAPLE, COFFEE, VANILLA, LACTOSE - A stout at this time of year? You’re crazy, Polly’s! Don’t hate the player - any time of the year is a good time of the year for a big bold stout, and with our brew team yearning for a trip to the dark side we couldn’t help but indulge them when they wrote the recipe for Maple Deluxe. A natural progression on our stout game after last year’s Just Like I Remember, this beer takes inspiration from the roadside diners on an old school US road trip. Seven specialty malts are at play on this beer, accentuated by an addition of our blend of coffee beans exclusive to our taproom, Polly’s Social. Not content to stop there, the brew team have added a hefty lashing of milk sugar and maple syrup to bring a pancakey gooeyness to proceedings.
