We have a policy here at the brewery of collaborative effort when it comes to all things Polly’s. Every Monday morning we sit down as a team and pool together any ideas we’ve had throughout the week to bring to the table and turn into a reality – whether it’s a weird and wonderful beer recipe, a campaign to run alongside a significant upcoming date in the calendar, all the way down to a simple TikTok video.

On a gloomy Monday morning not too long ago our social media manager Adam had a spark of inspiration, and asked the group “What is it our customers want? No, what do they need?”. Taking influence from the crazy panic buying of early covid all the way to the limits on food items of today, we realised an essentials pack was the thing missing from our storefront.

Floret - Extra Pale Ale 4.2%

EXTRA PALE ALE | 4.2% | AZACCA, CITRA, SIMCOE - Sometimes you just want a beer that is mega sessionable. Our Core pale ale is delicious, hazy juicebomb of a beer, balanced with enough bitterness to keep drinkers coming back for more. A baby version of our incredibly popular Spur IPA - Floret is positively bursting at the seams with peach, mango, and pineapple notes, backed up with pithy orange peel from its Citra, Simcoe and Azacca hop bill.

Rosebud - IPA 5.6%

INDIA PALE ALE | 5.6% | CITRA, GALAXY, MOSAIC, SIMCOE - Our flagship core beer - the style we're most well known for, and what we do best. Rosebud is an IPA in the New England style - the most popular variant of the style in the world. We've hopped this beer with Citra, Galaxy, Mosaic and Simcoe to create a certified tropical punchbowl of flavour. Strong enough to retain all that incredible mouthfeel, but sessionable enough to smash pints of.

Pine - Pale Ale (Gluten Free) 5.0%

PALE ALE (GLUTEN FREE) | 5.0% | CHINOOK, IDAHO 7, MOSAIC - We never like to have to exclude anyone from enjoying the experience of a Polly’s beer. We had it in mind that bringing a gluten-free beer to our output was the sensible thing to do for what felt like an eternity, and thanks to advancements in our brewing technology we’re delighted to bring Pine to the Polly’s party. Wrapped up in the style that we know and trust best, this pale ale encapsulates everything we’ve grown our reputation to over the last six years, but safe for those with an intolerance to the products in our regular output. Not cutting any corners here, we’ve brought Mosaic Spectrum, Idaho 7 and Chinook to the dance on this beer to create a pale ale positively bursting with tropical, pineapple and clean pine notes.

Pilsner - Lager Beer 4.7%

LAGER BEER | 4.7% | SAAZ, HALLERTAU MITTELFRÜH - When we were looking to expand our core range, we analysed what it was that other breweries had in their arsenal and it became obvious to really do a core range well, we’d need a lager as part of our output. Stripping things entirely back to basics with our effort, Pilsner is a straight up, no frills lager; brewed in honour of those incredible German and Czech styles that we treat as a reward for ourselves after a long week at the brewkit. A very simple grist bill imparts biscuit sweetness to play off a noble hop addition of Mittelfruh and Saaz to honour those aforementioned Czech and German masters for a pilsner that is crisp, clean, and delightfully moreish.

Within Reason - Double IPA 8.0%

DOUBLE IPA | 8.0% | SUPERDELIC CRYO, NECTARON, LUMINOSA, DOLCITA LUPOMAX - A strange flip has happened since those glory days of covid when everyone was chinning cans of DIPA in their back gardens. The demand was consistently for the strongest, the hoppiest, the most hype-forward and boy did we fill our boots. That wave might have hit a crest and broken now but we’re still of the opinion that when we break out a DIPA it’s go big or go home. Within Reason takes this mindset and runs with it full force - classic pillowy soft Polly’s DIPA body with an intense dry hop charge utilising only the freshest and hype driven hops we can get our hands on. Supercharged with in house favourite Nectaron, Luminosa, Cryo Superdelic and Dolcita Lupomax, this huge beer is dripping with super soft peach, coconut, and passionfruit notes, paired with boiled sweets, cream, and raspberries before an bright whisper of citrus peel bitterness balances things.

Cherry - Sour 4.5%

SOUR | 4.5% | CHERRY, SEA SALT - A love story five years in the making finally reaches its apex; our first ever sour beer has grown up and become part of our core range. A labour of love for our sour beer wizard Lally, we’d always maintained previously that we’d never attempt a style unless we worked with a brewery that knew what they were doing, or we’d bring someone on board comfortable with it. To have elevated one of our sour beers to regular brew status shows just how much faith we have in our fruit-forward output, and Cherry does exactly what it says on the tin - sweet morello cherries dance alongside gentle sourness, with a slight savoury edge.

Block Drift - India Pale Ale 6.1%

BLOCK DRIFT | 6.1% | LUMINOSA, STRATA, NELSON SAUVIN - We’ve said it before, but there really is something about a Polly’s IPA that clocks in at 6.1%. Ever since those early days when we created that insane first Citra Simcoe IPA as Loka Polly, all the way through to today, we’ve lost count of how many staff favourites clock in at this ABV and there can’t be a coincidence in it. With Block Drift, we went all in with the brief and decided to go with one thing and one thing alone - the absolute freshest, hype-forward hops we could possibly pack into a beer in one go. Bags and bags of Luminosa, Strata and Nelson Sauvin are jam-packed into this IPA and it tells in the finished product - positively dripping with a metric tonne of peach-mango lemonade, candied oranges, papaya, strawberry, crushed gooseberries and just a hint of dank cannabis smoke.

Toolbox Red - Hoppy Red Ale 6.0%

HOPPY RED ALE | 6.0% | MOSAIC LUPOMAX, STRATA, MOSAIC, CITRA - There was just something about growing up as beer drinkers as the craft beer movement was growing. Being in that moment where everything was new and shiny and exciting, queues around the corner from a bottleshop for the latest hype release, texts from mates to say a first pour was happening and you simply had to get back into town to try it, you just had to be there to truly appreciate it. Whilst craft beer has grown up and (whisper it quietly) joined the mainstream, we wanted to harken back to those days where there was a genuine excitement about new styles and techniques brewers were employing to poke their heads above the crowd. Toolbox Red is our callback to the wonderful simplicity, but tremendous complexity of the Red Ale; a style that seems to have fallen from the radar in more recent years of haze craze. Half a foot in the new school with two types of Mosaic hop, along with Strata and Citra make this a beautiful love letter to the old school with an eye on nostalgia

New Thing - Pale Ale 4.6%

PALE ALE | 4.6% | LUNA, CITRA LUPOMAX - We’ve said it plenty of times before over our eight years as a brewery, but when the weather is turning a little warmer, and the nights are drawing out a little longer, there’s nothing quite like a crisp pale ale to toast a hard day’s work after a long stint at the brewkit. As with many of our sub-5% beers, we’ve taken a whole load of inspiration from those first wave brewers of the UK craft beer movement, particularly The Kernel to brew New Thing. Utilising Citra Lupomax and a newly named Australian hop Luna on the cold side, this pale ale positively bursts with bright and spicy citrus notes to the max, before underlying notes of dark berries and fleshy mango dance in the background. A beer perfect for sessioning a couple of pints of in a beer garden, or kicking back watching the world go by on the decking - either way the best pairing for this pale is straight up summer sunshine.

Glass Towers - Oatcream Pale 5.6% [LACTOSE]

OATCREAM PALE | 5.6% | DOLCITA (PRYSMA, CRYO, LUPOMAX), LACTOSE - When it comes to those incredible Oat Cream beers we’ve spent the last twelve months developing and advancing from our taproom to commercial release, it’s all about utilising the hop varieties that pair best with the soft, fluffy and sweet mouthfeel that sets the base of this rapidly growing arm to our brewing journey. It’s safe to say Dolcita has firmly settled itself as a staff favourite here at Polly’s, and the peach rings, caramlised pineapple and creamy coconut notes are straight up built for use in an Oat Cream beer. Utilised in its Cryo, Lupomax and Prysma form, this beer is positively bursting at the seams with all those incredible flavour notes laid on top of a pillowy Polly’s pale ale.

Shapes Of Dreams - India Pale Ale 6.5%

INDIA PALE ALE | 6.5% | TALUS, CITRA (LUPOMAX,BBC), SIMCOE, SABRO - When we said 2026 would be the year we were really reclaim our hype credentials and rattle the branches to bring ourselves back up into the conversation of the best hop-forward producers in the UK, we really weren’t lying. We’ve set a pretty good path so far but we’re not done yet, and we continue on with Shapes of Dreams. Coming in at that magic 6.5% ABV where everything just works so well in tandem with one another, we’ve set the foundations of this beer off with a hearty hot side addition of Citra BBC pellets; specifically designed for hot side usage and bringing a bright, zippy bitterness to proceedings. Layered on top of this we’ve brought a four way dance of varieties that are massive in-house favourites here at Polly’s. Talus hits with a smack of pink grapefruit to accentuate the undercurrent of bitterness, before Citra Lupomax, Simcoe and Sabro bring ultra juicy citrus, stonefruit, and tropical notes to the party.

Good Morning Coffee Stout 7.0% [Webstore Exclusive/LACTOSE]

COFFEE STOUT | 7.0% | COFFEE, LACTOSE - Yeah yeah, tropical pale ales and fruit forward IPAs are great and all, but is there anything really better to awaken the senses than a big, robust coffee stout?  Utilising the custom blend of coffee we serve at Polly’s Social alongside a hearty lashing of lactose to replicate the smooth creaminess of a flat white, this is a coffee-leaning stout drizzled with silky vanilla ice cream notes to create an experience to savour in a warm and inviting atmosphere such as out of the cold in a bustling pub with friends, or solo in front of a roaring fire.
