WEST COAST IPA | 6.0% | CENTENNIAL, CITRA, EL DORADO, SIMCOE - When you're hitting the West Coast, you've gotta stay for the sun baby! Whilst we typically aim our Westies as a shameless homage to the Washington and Oregon resinous hop bombs of yesteryear, Route 99 takes a soft top convertible south, along California 1 for a trip along the Pacific Highway. A West Coast Pale Ale certifiably drenched with sunlight, we've taken inspiration from the laid back, relaxed vibe of the Californian way of life in this beer; with a heavy whirlpool addition of Centennial bringing the bitterness to the party to play off perfectly against fresh cut grass, pine, and grapefruit notes from our reeled back use of Simcoe and Citra in the dry hop. Fermented clean for maximum drinkability and a certified summer banger from start to finish.

INDIA PALE ALE | 6.2% | RIWAKA, NZ-106, NECTARON, MOSAIC LUPOMAX - We’ve been massive fans of NZ-106 since we first utilised it in our birthday releases back in January - a massive statement of where we’re at as a brewery to be able to get our hands on experimental varieties from the other side of the world before their general release, we’ve utilised it as the headline hop on Drops of Flora. Joined by country fellows Nectaron and Riwaka, we’ve brought the very best of the South Pacific to this beer, absolutely bursting with a massive punch of passionfruit, guava and mango, backed up with peach and white grape before an underlying dankness rounds things out. Balanced with a little Mosaic Lupomax in the whirlpool to bring some fresh and bright citrus rind bitterness, this is a maxed out, all in IPA.

PALE ALE | 5.8% | IDAHO 7, NELSON SAUVIN - Now that we've grown to a point where our hop merchant pretty much gives us free rein with any varietal we're after, it means we can afford to experiment with utilizing different techniques along the brewing process of our beers. Hybrid Minds is a straight up two-hop showcase of a pale ale - Idaho 7 bringing zesty marmalade with underlying earthy black tea notes, and Nelson Sauvin showing why it's one of the most sought-after varietals on the planet with its characteristic white wine grape and gooseberry medley. The real magic in this beer though is through our use of Cryo Idaho 7 in the whirlpool; creating, in our opinion anyway, a much cleaner bitterness throughout the drinking experience. Bridging that gap between pale ale and IPA strength at 5.8% and wrapped up in our bespoke LA3 strain for maximum fluffiness, this beer is an expression of our love of experimentation.

PALE ALE | 5.8% | CITRA, SABRO - Our last collaboration before the 2020 lockdown with our super pals over at Big Mountain Brewing, and a surefire cult favourite takes its rightful place as the pale ale showing for our new Icons range. We've revisited this beer several times over its lifespan, and originally our first foray into using everybody's new favourite hype hop Sabro in one of our beers, we're now world-weathered in the little quirks and idiosyncrasies of this incredible varietal. Amplified up to the max, Sabro brings a metric tonne of sweet, creamy, pineapple and coconut notes before being reeled in by an in-house Polly's favourite in Citra to keep everything balanced. Named for a truly terrible George Takei impression, this beer will literally make you say "...Oh my!".

OAT CREAM IPA | 6.3% | VANILLA, DOLCITA, TALUS, LACTOSE - You know how some things just work together? The same way Lennon was supposed to meet McCartney, and the way you couldn’t imagine anyone except for Chewie sitting next to Han in the Millenium Falcon, sometimes a hop is just destined to be paired with a certain beer style, and we’ve found that unbreakable bond between Dolcita and our Oat Cream IPAs. Thick, pulpy, and pillowy to the max, Sundown Theory utilises a huge amount of cold side Dolcita to impart a metric tonne of peach rings, caramelised pineapples, and sweet valencia oranges. We’re responsible enough to know that we can’t let a beer wander into cloyingly sweet territory here at Polly’s though, so we’ve accentuated this with a whisper of Talus to bring a balance of subtle pine resin and grapefruit to the party. A beer that was just made and custom built for summer time.

TRIPLE IPA | 10.0% | CITRA, EKUANOT, GALAXY, MOSAIC, SIMCOE - Overwhelmingly popular every time we've brewed it previously, each incarnation of the headline act of our original three has progressively gotten better and better, and we've spared no expense on this return to its amplified version either, brewed  by our owner Sean on the Pilot Kit. Featuring an insanely high dry hop charge - we've loaded this version of our most well-renowned beer with an extra heavy lashing of Galaxy alongside its superstar lineup of Citra, Mosaic, Columbus and Ekuanot, just to give it that little push into the stratosphere. Our favourite DIPA to brew, nudged up to TIPA strength, Rosa blooms with a bouquet of everything dank and juicy.
