INDIA PALE ALE | 6.5% | TALUS, CITRA (LUPOMAX,BBC), SIMCOE, SABRO - When we said 2026 would be the year we were really reclaim our hype credentials and rattle the branches to bring ourselves back up into the conversation of the best hop-forward producers in the UK, we really weren’t lying. We’ve set a pretty good path so far but we’re not done yet, and we continue on with Shapes of Dreams. Coming in at that magic 6.5% ABV where everything just works so well in tandem with one another, we’ve set the foundations of this beer off with a hearty hot side addition of Citra BBC pellets; specifically designed for hot side usage and bringing a bright, zippy bitterness to proceedings. Layered on top of this we’ve brought a four way dance of varieties that are massive in-house favourites here at Polly’s. Talus hits with a smack of pink grapefruit to accentuate the undercurrent of bitterness, before Citra Lupomax, Simcoe and Sabro bring ultra juicy citrus, stonefruit, and tropical notes to the party.

INDIA PALE ALE | 6.6% | TALUS (CRYO, T90), SIMCOE (CRYO, T90), CITRA LUPOMAX - We keep beating this drum, but hot diggity our beers are tasting better than ever as we roll into the summer. Our emphasis on improving every facet of our brewing experience is at full play on Unlikely Places and it’s all the better for it. We’re already huge fans of Talus here in the brewery, Simcoe and Citra need no introduction whatsoever as cornerstone hops intertwined throughout our brewing history, and we know they combine incredibly well. How do you accelerate that flavour experience though? Lean into our head brewer Joe’s passion for exploration and experimentation with different varieties within varieties is what you do! With a simple and unfussy Citra T90 addition hot side, we’ve gone all out on the cold side, with additions of Citra Lupomax, Simcoe in both its T90 and Cryo form, and Talus again in both its T90 and Cryo form. The end result is an IPA absolutely packed to the nines with stonefruit, mango, zesty pink grapefruit, summer berries and lime.

ANTIPODEAN VANILLA IPA | 6.0% | NECTARON, GALAXY, RIWAKA - It would be no great statement to say our owner Sean has seen an injection of ingenuity since the concept of utilising vanilla in our beers landed on his radar. The ability to replicate those ultra-pillowy New England IPAs that set off that initial spark of inspiration that birthed Polly’s in the first place has been a white whale we’ve been constantly chasing throughout our eight years, and this innovation, whilst not being the first brewery to utilise it, is certainly setting our beers to the next level. Wanting to keep things purely south of the Equator on this beer, we’ve gone with an all-South Pacific lineup of in-house favourite Galaxy, with NZ titan Riwaka, and everyone’s favourite hype hop Nectaron for an IPA that balances that fine line between thick, pulpy juice sweetness, and underlying bitterness that reminds you this is a beer, and a big Polly’s beer at that.

OATCREAM IPA | 6.3% | SABRO, CASHMERE, MOTUEKA, LACTOSE - Easily our favourite thing about the last year at Polly’s is discovering and refining Oat Cream IPAs into our output. A style that started as an experiment in our taproom Polly’s Social has developed into a full blown hype machine and fans of our beers clamour for the next release each time we drop them. With Luxe, we wanted to intentionally accentuate that creaminess with the hops we used, hence the introduction of Sabro and Cashmere to the cold side - both bringing those incredibly unique coconut vibes in abundance, with bold juicy flavours of peach, tangerine and pineapple to boot. We’re incredibly conscious of balance when it comes to these beers though - veer too much into the sweet territory and the beer becomes cloying and too much, so we’ve levelled Luxe out with a generous helping of NZ titan Motueka to impart some zippy lime and slight herbal notes. A delightfully decadent and delicious beer, and a step further on in our Oat Cream game.

FRUITED IPA | 6.0% | PASSIONFRUIT, NECTARON, GALAXY

DOUBLE IPA | 8.0% | SUPERDELIC CRYO, NECTARON, LUMINOSA, DOLCITA LUPOMAX - A strange flip has happened since those glory days of covid when everyone was chinning cans of DIPA in their back gardens. The demand was consistently for the strongest, the hoppiest, the most hype-forward and boy did we fill our boots. That wave might have hit a crest and broken now but we’re still of the opinion that when we break out a DIPA it’s go big or go home. Within Reason takes this mindset and runs with it full force - classic pillowy soft Polly’s DIPA body with an intense dry hop charge utilising only the freshest and hype driven hops we can get our hands on. Supercharged with in house favourite Nectaron, Luminosa, Cryo Superdelic and Dolcita Lupomax, this huge beer is dripping with super soft peach, coconut, and passionfruit notes, paired with boiled sweets, cream, and raspberries before an bright whisper of citrus peel bitterness balances things.
