EXTRA PALE ALE | 4.2% | AZACCA, CITRA, SIMCOE - Sometimes you just want a beer that is mega sessionable. Our Core pale ale is delicious, hazy juicebomb of a beer, balanced with enough bitterness to keep drinkers coming back for more. A baby version of our incredibly popular Spur IPA - Floret is positively bursting at the seams with peach, mango, and pineapple notes, backed up with pithy orange peel from its Citra, Simcoe and Azacca hop bill.

INDIA PALE ALE | 5.6% | CITRA, GALAXY, MOSAIC, SIMCOE - Our flagship core beer - the style we're most well known for, and what we do best. Rosebud is an IPA in the New England style - the most popular variant of the style in the world. We've hopped this beer with Citra, Galaxy, Mosaic and Simcoe to create a certified tropical punchbowl of flavour. Strong enough to retain all that incredible mouthfeel, but sessionable enough to smash pints of.

INDIA PALE ALE | 7.2% | AZACCA, CITRA, SIMCOE - Spur has always been a massive in-house favourite here at Polly's, and the proof is in the pudding - the hop bill of Azacca, Citra and Simcoe bounces with Um-Bongo levels of tropical flavour, featuring a full on fruit salad of papaya, peach, tangerine and mango on both the nose and flavour. The scrappy medium child of the original Augment trio - a nightmare to can on its first go round in 2019 on the back of how highly hopped it was - we've tamed this awesome beast and brought it into our Icons range as a permanent fixture. Slathered with our bespoke in-house LA3 yeast culture for massive hop suspension, this is a beer that is 100% hazy, dank, and juicy. Spur, it's good to have you back for good.

PALE ALE | 5.8% | CITRA, SABRO - Our last collaboration before the 2020 lockdown with our super pals over at Big Mountain Brewing, and a surefire cult favourite takes its rightful place as the pale ale showing for our new Icons range. We've revisited this beer several times over its lifespan, and originally our first foray into using everybody's new favourite hype hop Sabro in one of our beers, we're now world-weathered in the little quirks and idiosyncrasies of this incredible varietal. Amplified up to the max, Sabro brings a metric tonne of sweet, creamy, pineapple and coconut notes before being reeled in by an in-house Polly's favourite in Citra to keep everything balanced. Named for a truly terrible George Takei impression, this beer will literally make you say "...Oh my!".

LAGER BEER | 4.7% | SAAZ, HALLERTAU MITTELFRÜH - When we were looking to expand our core range, we analysed what it was that other breweries had in their arsenal and it became obvious to really do a core range well, we’d need a lager as part of our output. Stripping things entirely back to basics with our effort, Pilsner is a straight up, no frills lager; brewed in honour of those incredible German and Czech styles that we treat as a reward for ourselves after a long week at the brewkit. A very simple grist bill imparts biscuit sweetness to play off a noble hop addition of Mittelfruh and Saaz to honour those aforementioned Czech and German masters for a pilsner that is crisp, clean, and delightfully moreish.

INDIA PALE ALE | 6.6% | EL DORADO, SIMCOE - The original underrated dark horse of the original three and back permanently as part of our Icons range; Patternist has gained and continues to carry its own massive cult following thanks to it's no frills El Dorado and Simcoe hop bill, albeit hopped up to the absolute nines, and its ornate tiling artwork garnering amazing feedback. A favourite among the staff here at Polly's, and the beer from the original three that started it all that we've brewed the most since we launched our Augment range, expect all kinds of mango, pineapple, jelly tots (no, really) with just a hint of resinous pine bursting from this incredible IPA. A hit when we first brewed it, and a surefire hit again with all the techniques we continue to learn since.

PALE ALE | 5.6% | AZACCA, CITRA - It's back once after a long long layoff in the shadows! Lupo Capisco first charmed hearts back in the uneasy days of the first Covid lockdown being lifted - a beer brewed for the weather and our opinion that sometimes there's nothing better after a long day at the brew kit than a straight up, unfussy, clean and crisp pale ale. A beer specifically made with smashability in mind, Lupo Capisco is brewed with the masters of simplicity in mind - The Kernel, who in our opinion anyway, make some of the best pales that we can go back to again and again for in the UK. Hopped with a relatively easygoing dry-hop charge of Azacca and Citra, this is soft, juicy, and crisp, with a swagbag of mango and tropical flavours to complement their respective pithy bitter notes.

PALE ALE | 5.3% | PINK, SIMCOE, SIMCOE CRYO - We’ve got a pretty good working relationship with our hop merchants, but it certainly doesn’t harm every now and again to do a little shakedown with our reps to see what the latest experimental hops coming out of the farms are. When we learned about ID-158, dubbed “PINK” after its distinctive trial markers in the field, we were immediately curious and charmed. Bringing all the usual intense citrus and stonefruit flavours we’d expect from Jackson Farms over in Idaho, but with an undercurrent of honey, jazz apple and vanilla, we clamoured to get this incredible sounding hop into a beer, and Velvet Motion is the result. Conscious that it might lean too heavily into the overly sweet territory, we’ve dosed this beer with not only T90 Simcoe, but Cryo Simcoe to boot to bring the balance with just a whisper of pine and pithy citrus rind, but enough apricot and passionfruit to act as a compliment to this incredible experimental hop.

INDIA PALE ALE | 6.3% | NECTARON, SIMCOE, MOSAIC - Mosaic and Simcoe is a pretty solid combination that has followed us throughout our entire brewing history here at Polly’s. From the very first DDH IPA we produced under the Originals banner and took to 2018’s Little Summer Beer Bash, to certified fan classics in Goldroom and Omen Roam from our Augment range, it’s just a combination that has and always will absolutely slap. How do you advance on such a behemoth combination though? Why not make it a three way dance with our new brewing darling Nectaron? Ending up with one of the best IPAs we’ve ever brewed, we always said Mosaic and Simcoe was like Lilt for grownups; Nectaron, Mosaic and Simcoe is like Um Bongo for the cool kids who smoke behind the bike sheds. Straight up dripping with tangerine, berry, passionfruit, peach and mangosteen, with a refined piney bitterness running through to keep everything in check. Insanely good.

HOPPY RED ALE | 6.0% | MOSAIC LUPOMAX, STRATA, MOSAIC, CITRA - There was just something about growing up as beer drinkers as the craft beer movement was growing. Being in that moment where everything was new and shiny and exciting, queues around the corner from a bottleshop for the latest hype release, texts from mates to say a first pour was happening and you simply had to get back into town to try it, you just had to be there to truly appreciate it. Whilst craft beer has grown up and (whisper it quietly) joined the mainstream, we wanted to harken back to those days where there was a genuine excitement about new styles and techniques brewers were employing to poke their heads above the crowd. Toolbox Red is our callback to the wonderful simplicity, but tremendous complexity of the Red Ale; a style that seems to have fallen from the radar in more recent years of haze craze. Half a foot in the new school with two types of Mosaic hop, along with Strata and Citra make this a beautiful love letter to the old school with an eye on nostalgia

IRISH DRY STOUT | 4.6% | - Whilst we’re very much a tropical and fruit forward pale and hoppy brewery by trade, we do occasionally brew to the seasons here at Polly’s HQ. With it being the peak of winter, we’re yearning for something simple, to be enjoyed in front of a roaring fire in a pub with mates. Step in the aptly named Jumper Season. Taking influence from the Irish pubs we’ve independently all experienced and collectively loved, the quota on this beer was to create a purposely full bodied Irish stout; letting the malt and the malt alone do the talking on this beer. Going off the beaten track with Maris Otter malt, we’ve backed this up with roasted barley and flaked barley to create a velvety smooth, decadent stout that isn’t extreme on the strength. Perfect for this time of year.

PALE ALE | 4.0% | NZ-106, NELSON SAUVIN BLISS - Our goal to regain our hype credentials doesn’t just stop at the big and decadent beers. We’re actively pushing this vibe throughout the entire brewery across the ABV spectrum to make even our sessionable beers a lot more desirable, flavour driven and sought-after rather than rinsing the same Citra and Mosaic combinations over and over. With Quiet Hour, we’ve gone all in on the freshest and most advanced technology our supplier Freestyle Hops can get us. Specialising in hops sourced from New Zealand, we’ve utilised NZH-106 - an experimental hop fresh from the hop breeding company native to the South Pacific. Backing this hop up is a brand new blend of Nelson Sauvin - the aptly named Bliss blend. Taking early-harvested Nelson and blending it with purposely stressed, ultra late-harvested crops, the result is a hop that is outrageously tropical, with complex sweet citrus, and a light dankness that only Nelson brings to the party.

INDIA PALE ALE | 6.2% | MOSAIC, MOTUEKA, NECTARON, STRATA - We say it pretty often here at Polly’s, but we don’t half count ourselves lucky that we’re able to access some of the most groundbreaking and influential hop varieties in the world today - a journey that began eight years ago is still bearing fruit, and our intention to push our brewing expertise as hard and as far as we can never relents. Broken Sideways showcases both our ability to get a hold of some of the most unique flavour-intense hops, as well as our meticulous craft in knowing just how much to dose each beer with in order to bring out those nuances in flavour from each wonderfully unique ingredient. Motueka leads the charge on this beer, a bright, punchy blast of NZ citrus that only the hop farmers of the South Pacific are able to produce, before a dry-hop charge of another NZ titan in Nectaron brings intense pineapple, peach and passionfruit, followed by equal parts Mosaic and Strata bring complex tangerine, strawberry and cannabis smoke dankness.

NZ PILSNER | 4.7% | MOTUEKA, RAKAU, NZ CASCADE - Everyone goes full circle eventually. Once you’ve been in the beer game long enough, the yearn for a simple, crisp and clean lager is pretty impossible to stave off, and we’re no exception to the rule here at Polly’s. A style perfect for supping after a long shift at the brewkit, Tahi is a flourish on the classic Pilsner style with a 100% New Zealand hop bill to add a little extra zest, and that extra layer we wouldn’t get from a standard Pilsner. Featuring a three way dance of Motueka, Rakau and NZ Cascade, this beer is all about delicate balances - the breadiness from the malt, the zippy sparkle from the carbonation, and the bright citrus notes from the hops that this world renowned hop growing area is only capable of.

OATCREAM DIPA | 8.0% | VANILLA, NECTARON, SABRO - We’re really going head first into the whole idea of our Oat Cream beers here at Polly’s this year. After a trial period at our taproom Polly’s Social where we literally couldn’t brew enough to keep up with demand, we’ve since brought this style to our big brew kit with exactly the same results whenever we release one into the wild. Directly influenced by the soft, pillowy haze craze beers of the US that inspired us to brew in the first place, Lucid Delay is the next elevation of our Oat Cream beer game. With a higher than usual split of oats in the grist to accentuate that fluffiness, we’ve added fresh hand scraped vanilla and a lashing of lactose to really embrace the soft fruit flavours of the Nectaron and Sabro dry-hop charge. Expect peach and passionfruit with coconut and tangerine atop a pillowy mouthfeel on this amplified DIPA.

INDIA PALE ALE | 6.1% | SIMCOE, TALUS, TALUS CRYO, VIC SECRET - Experimentation is undoubtedly our favourite thing about working in modern beer, and if nothing else, our head brewer Joe loves to experiment with his recipes. Most recent on his radar has been working with both T90 versions of hop varieties and pairing them with their Cryo versions to multi-layer those flavour compounds and create a much more complex and interesting drinking experience. Utilising an in-house favourite in Talus, we’ve doubled up this hop in two separate versions before accentuating with an Aussie classic Vic Secret, alongside cornerstone hop Simcoe to create an IPA that is an experience from the first sip to the last gulp - a cascading dance of intense pink grapefruit and citrus zest, with underlying passionfruit and berry notes, before a whisper of sage, dried roses and pine for complexity.

DOUBLE IPA | 8.4% | CITRA, EKUANOT, GALAXY, MOSAIC, SIMCOE - Back for good as part of our Icons range, if Galaxy Mosaic IPA was the beer that set off some rumbles for us, then Rosa was the beer that smashed through the glass ceiling and planted us firmly on the map. Gaining near-universal praise from drinkers and industry insiders when we first brewed it in 2019 for our UK-wide Augment launch, for all the incredible places our Augment range has branched off into since then, we love coming back to what we feel is the benchmark for our DIPAs, and our brewers certainly get giddy with excitement when they know our headline beer is back on the brew plans. Featuring a five-hop mega line up of Simcoe, Galaxy, Mosaic, Citra and Ekuanot, this beer is sticky, juicy, piney and dank - 100% Polly's.
