After hosting the legendary Thornbridge at Polly’s HQ and brewing our 7th Birthday White IPA with them, we were really struck with the concept of melding US hop-forward alongside German traditional styles.
Whilst we utilised 100% T-90 hops in our birthday beer, we took a look at our hop store and noticed a small corner’s worth of cryo hops hiding away just begging to be used on a Pilot Kit beer.
With that in mind, we figured why not, and Retro Waves was born.
Featuring Cryo versions of both Mosaic and Simcoe, with a whisper of Citra for a flourish, the result is a DDH White IPA that positively bursts with flavour – sticky stonefruit notes, backed up with tangerine, berries and mango play off subtle but delightfullly complex yeasty esters of banana and clove.
