Sundown Theory - Oat Cream IPA 6.3% [Lactose]

OAT CREAM IPA | 6.3% | VANILLA, DOLCITA, TALUS, LACTOSE - You know how some things just work together? The same way Lennon was supposed to meet McCartney, and the way you couldn’t imagine anyone except for Chewie sitting next to Han in the Millenium Falcon, sometimes a hop is just destined to be paired with a certain beer style, and we’ve found that unbreakable bond between Dolcita and our Oat Cream IPAs. Thick, pulpy, and pillowy to the max, Sundown Theory utilises a huge amount of cold side Dolcita to impart a metric tonne of peach rings, caramelised pineapples, and sweet valencia oranges. We’re responsible enough to know that we can’t let a beer wander into cloyingly sweet territory here at Polly’s though, so we’ve accentuated this with a whisper of Talus to bring a balance of subtle pine resin and grapefruit to the party. A beer that was just made and custom built for summer time.

Surrealistic - DDH Pale Ale 5.3%

DDH PALE ALE | 5.3% | CITRA (DYNABOOST, PRYSMA, CRYO, LUPOMAX) - We’ve always been big fans of a single hop showcase here at Polly’s, but showcasing those hops in just pellet form is so 2018. These days we’re leaning into the incredible working relationship we have with our hop suppliers and the hard work our head brewer Joe has been putting in to bring every bit of diversity available across a certain hop variety into a single hop beer. Surrealistic, namechecked for how much we have to pinch ourselves that this little brewery in North Wales has come so far in eight years, brings four different types of a cornerstone hop in Citra to the party on a single beer. Cryo and Lupomax bring pelletised but ultra potent hop flavours, before liquid additions in Prysma and Dynaboost elevate those intense flavour compounds to the max. An absolutely insane amount of bright, punchy grapefruit, fresh orange, and muddled limes are dancing in tandem on this maxed out pale ale.

Pilsner - Lager Beer 4.7%

LAGER BEER | 4.7% | SAAZ, HALLERTAU MITTELFRÜH - When we were looking to expand our core range, we analysed what it was that other breweries had in their arsenal and it became obvious to really do a core range well, we’d need a lager as part of our output. Stripping things entirely back to basics with our effort, Pilsner is a straight up, no frills lager; brewed in honour of those incredible German and Czech styles that we treat as a reward for ourselves after a long week at the brewkit. A very simple grist bill imparts biscuit sweetness to play off a noble hop addition of Mittelfruh and Saaz to honour those aforementioned Czech and German masters for a pilsner that is crisp, clean, and delightfully moreish.

Good Morning Coffee Stout 7.0% [Webstore Exclusive/LACTOSE]

COFFEE STOUT | 7.0% | COFFEE, LACTOSE - Yeah yeah, tropical pale ales and fruit forward IPAs are great and all, but is there anything really better to awaken the senses than a big, robust coffee stout?  Utilising the custom blend of coffee we serve at Polly’s Social alongside a hearty lashing of lactose to replicate the smooth creaminess of a flat white, this is a coffee-leaning stout drizzled with silky vanilla ice cream notes to create an experience to savour in a warm and inviting atmosphere such as out of the cold in a bustling pub with friends, or solo in front of a roaring fire.

Low Energy - Pale Ale 4.6%

PALE ALE | 4.6% | KRUSH! - Low Energy in name, certainly no low energy in execution on this incredible pale ale. Krush, the former HBC 586 has been an absolute barnstormer of a favourite hop here at Polly’s since it first landed a few short years ago. Having more or less free access to this Stateside slammer has gotten our brewers extremely giddy with excitement, and what better to show our love for a hop that has done so much in its short time being commercially available than a single hop showcase wrapped up in a super sessionable pale ale? Knocking it out of the park and then some, Low Energy packs a massive punch of tropical fruit salad sweetness beset by a smooth undercurrent of accessible bitterness for balance. Expect a big old swag bag of juicy mango, guava and passionfruit positively dripping from this pale ale backed up by a whisper of pithy citrus bitterness.

Layers - India Pale Ale 6.5%

INDIA PALE ALE | 6.5% | IDAHO 7, MOSAIC, SIMCOE - Whilst we're very serious about our craft here at Polly's HQ, sometimes you've just got to take a silly concept and run with it. When one of our brewers shouted up on our group chat that they wanted to create a beer with a dry-hop bill "a bit like a sandwich", we were immediately intrigued. When asked to elaborate, we were given the concept of two smaller additions sandwiched between a meaty middle, and lo - Layers was born. An IPA clocking in at that magic Polly's ABV of 6.5% where everything just seems to work in harmony every single time, Mosaic is the meaty middle in this beer; with those signature apricot, mango and bubblegum notes expressing to the max, before our equal additions of Idaho 7 and Cryo Simcoe sandwich that sweetness in with zesty citrus notes. A silly concept? Absolutely. An awesome finished result? You'd better believe it.

Shifting Plates - Best Bitter 4.0%

BEST BITTER | 4.0% | WOLF AND DRAGON - In case anyone hadn’t already noticed, we’re big suckers for nostalgia here at Polly’s Brew Co. We’ve showcased that thirst for nostalgia by working with a brewery that has existed on our radars long before Polly’s existed, stretching back to the days in which a considerable amount of us all worked in our own bars and restaurants, serving beers from the understated but magnificent Brimstage Brewery. Quietly making some of the best cask beer we’ve had the pleasure to try, we decided to bring our collective expertise together to brew a heritage style and a celebration of our formative drinking years - Shifting Plates. Kicking it very old school and utilising full leaf Styrian hops, this beer leads with the malt to give a warm hug of nostalgia, but with a bright and pleasant fruitiness in a thoroughly modern best bitter.

Lemon Cheesecake Sour 6.5% [Webstore Exclusive/LACTOSE]

SOUR | 6.5% | LEMON, VANILLA, LACTOSE - What is the best kind of dessert? It’s obviously got to be sweet, but with a sharpness that awakens the senses at the same time. The latest idea that has found its way to our pilot kit is a decadent one, and a beer that we feel is the perfect example of a pastry sour that doesn’t need an instruction manual attached to it to get it out into the glass. Utilising a super-biscuity grist bill to act as the base to this beer, we’ve brought an absolute tonne of fresh hand-scraped vanilla, a hearty lashing of lactose to bulk up the creaminess, and fresh sicilian lemons for an ultra bright zesty spark to replicate the very humble (but delicious) cheesecake that inspired this incredible beer.

Silent Pulse - Pale Ale 4.5%

PALE ALE | 4.5% | AUDACIA, MERIDIAN, CITRA LUPOMAX - We’ve mentioned it before but our relationship with our hop supplier has never been more positive than it is in 2026 - our accessibility to hops we might not necessarily have been able to utilise is better than ever and we wanted to explore some more off-the-beaten track varieties on Silent Pulse, all the while maintaining that drinkability and signature Polly’s vibe that keeps our fans coming back for more. With this beer we’re bringing two new hops, Audacia and Meridian to the party - the former described as a “sassy noble” hop, and the latter discovered completely by accident from the same hop farm, Indie Hops in Oregon. Bringing something a little different in the flavour profile, these hops utilised in tandem burst with boysenberry, huckleberry, blackcurrant and pomegranate notes, before a hearty helping of Citra Lupomax brings those bright, punchy citrus notes that are a signature of our beers to finish.

Southern Cream - Antipodean Vanilla IPA 6.0% [Webstore Exclusive]

ANTIPODEAN VANILLA IPA | 6.0% | NECTARON, GALAXY, RIWAKA - It would be no great statement to say our owner Sean has seen an injection of ingenuity since the concept of utilising vanilla in our beers landed on his radar. The ability to replicate those ultra-pillowy New England IPAs that set off that initial spark of inspiration that birthed Polly’s in the first place has been a white whale we’ve been constantly chasing throughout our eight years, and this innovation, whilst not being the first brewery to utilise it, is certainly setting our beers to the next level. Wanting to keep things purely south of the Equator on this beer, we’ve gone with an all-South Pacific lineup of in-house favourite Galaxy, with NZ titan Riwaka, and everyone’s favourite hype hop Nectaron for an IPA that balances that fine line between thick, pulpy juice sweetness, and underlying bitterness that reminds you this is a beer, and a big Polly’s beer at that.

Dreamlike Sequence - Double IPA 8.2%

DOUBLE IPA | 8.2% | LUMINOSA, STRATA, TALUS, CITRA - A big cult classic gets a revamp with a thoroughly 2026 stamp on it. We haven’t brewed Dreamlike Sequence for seven long years, and for the longest time our loyal drinkers thought it was consigned to the history books for good - too hoppy, too intense, a beer that almost broke our original brewkit owing to how big we went on it at the time, we’ve updated this mammoth beer with everything we’ve learned in the subsequent time and boy have we maxed this one out. A callback to the original recipe in Citra lays the foundations with fresh and bright citrus notes, before a three way mega dance of a trio of hops that we can’t get enough of here at Polly’s in Strata, Talus and everyone’s favourite hype hop Luminosa bring potent tropical notes, super ripe passionfruit, fresh strawberries, candied orange peels, peach mango lemonade, and that underlying cannabis smoke finish that only Strata can bring.
