What is the best kind of dessert? It’s obviously got to be sweet, but with a sharpness that awakens the senses at the same time. The latest idea that has found its way to our pilot kit is a decadent one, and a beer that we feel is the perfect example of a pastry sour that doesn’t need an instruction manual attached to it to get it out into the glass. Utilising a super-biscuity grist bill to act as the base to this beer, we’ve brought an absolute tonne of fresh hand-scraped vanilla, a hearty lashing of lactose to bulk up the creaminess, and fresh sicilian lemons for an ultra bright zesty spark to replicate the very humble (but delicious) cheesecake that inspired this incredible beer.
