We’ve said it plenty of times before but our pilot kit is an absolute blessing to our passion for experimentation here at Polly’s. A channel through which we can trial recipes that strike us in a moment of inspiration, without the stress of having to commission it on our larger kit; Vanilla Pineapple Sour Shake is a tentative step into the world of dessert style sours after dipping our toes for our birthday beers earlier in the year. Wanting to create a drinking experience that doesn’t require an instruction manual on how to serve it prior to opening, this beer utilises our hazy IPA malt bill to add tonnes of body, dosed with sour pitch, and then absolutely loaded with fresh, hand-scraped vanilla, pineapple and a lashing of lactose to create a sour beer that is accessible, bright and punchy on flavour, but most importantly – fun. A delight from start to finish, and a notch on our confidence chart with this notoriously difficult style to brew.
