It’s crazy to think it’s almost nine years since we brewed those very first beers here at Polly’s. We’ll be the first to admit they were a little rough around the edges but there was one beer that really stood out as a sign we were onto something – our Galaxy Mosaic IPA. We’ve learned a lot since then, and things have come and gone, but our passion for introducing those classics to new techniques has never wavered, and we’ve brought that combo back again on Soft Signal; this time dosed up as an Oat Cream version of our IPA game. Bringing the Oats up in the grist amplifies that fluffy pillowy mouthfeel, and treating it with fresh hand-scraped vanilla and a healthy lashing of lactose brings that sweetness level to the max. Then the hops! Galaxy brings deep passionfruit and peach, whilst Mosaic brings a fruit basket of Mango, Guava and Blueberries.
