Wanting to replicate the beers that inspired us to brew in the first place, Seven Summers is front loaded with a massive whirlpool addition of Enigma on the hot side to impart all manner of robust grapefruit, piney and resinous bitter notes, before a gentle addition of even more Enigma and new to us at Polly’s on the cold side brings orange zest, lime and just a little whisper of white peaches to the party for balance.
