Floret - Extra Pale Ale 4.2% × 2

EXTRA PALE ALE | 4.2% | AZACCA, CITRA, SIMCOE - Sometimes you just want a beer that is mega sessionable. Our Core pale ale is delicious, hazy juicebomb of a beer, balanced with enough bitterness to keep drinkers coming back for more. A baby version of our incredibly popular Spur IPA - Floret is positively bursting at the seams with peach, mango, and pineapple notes, backed up with pithy orange peel from its Citra, Simcoe and Azacca hop bill.

Rosebud - IPA 5.6% × 2

INDIA PALE ALE | 5.6% | CITRA, GALAXY, MOSAIC, SIMCOE - Our flagship core beer - the style we're most well known for, and what we do best. Rosebud is an IPA in the New England style - the most popular variant of the style in the world. We've hopped this beer with Citra, Galaxy, Mosaic and Simcoe to create a certified tropical punchbowl of flavour. Strong enough to retain all that incredible mouthfeel, but sessionable enough to smash pints of.

Oh My... - Pale Ale 5.8% × 2

PALE ALE | 5.8% | CITRA, SABRO - Our last collaboration before the 2020 lockdown with our super pals over at Big Mountain Brewing, and a surefire cult favourite takes its rightful place as the pale ale showing for our new Icons range. We've revisited this beer several times over its lifespan, and originally our first foray into using everybody's new favourite hype hop Sabro in one of our beers, we're now world-weathered in the little quirks and idiosyncrasies of this incredible varietal. Amplified up to the max, Sabro brings a metric tonne of sweet, creamy, pineapple and coconut notes before being reeled in by an in-house Polly's favourite in Citra to keep everything balanced. Named for a truly terrible George Takei impression, this beer will literally make you say "...Oh my!".

Patternist - IPA 6.6% × 2

INDIA PALE ALE | 6.6% | EL DORADO, SIMCOE - The original underrated dark horse of the original three and back permanently as part of our Icons range; Patternist has gained and continues to carry its own massive cult following thanks to it's no frills El Dorado and Simcoe hop bill, albeit hopped up to the absolute nines, and its ornate tiling artwork garnering amazing feedback. A favourite among the staff here at Polly's, and the beer from the original three that started it all that we've brewed the most since we launched our Augment range, expect all kinds of mango, pineapple, jelly tots (no, really) with just a hint of resinous pine bursting from this incredible IPA. A hit when we first brewed it, and a surefire hit again with all the techniques we continue to learn since.

Pilsner - Lager Beer 4.7% × 2

LAGER BEER | 4.7% | SAAZ, HALLERTAU MITTELFRÜH - When we were looking to expand our core range, we analysed what it was that other breweries had in their arsenal and it became obvious to really do a core range well, we’d need a lager as part of our output. Stripping things entirely back to basics with our effort, Pilsner is a straight up, no frills lager; brewed in honour of those incredible German and Czech styles that we treat as a reward for ourselves after a long week at the brewkit. A very simple grist bill imparts biscuit sweetness to play off a noble hop addition of Mittelfruh and Saaz to honour those aforementioned Czech and German masters for a pilsner that is crisp, clean, and delightfully moreish.

Spare Space - Pale Ale 4.1%

PALE ALE | 4.1% | KOHIA NELSON, NELSON SAUVIN, RAKAU - To say that 2026 has been a revelation for our access to the freshest crops of the newest hype hops on the planet would be a huge understatement. We nailed our colours to the mast this year to bring ourselves back up to the top of the table in terms of hyped breweries and Square Space is another entry into that canon. With greater accessibility to a wider selection of hop merchants, we’ve leveraged ourselves with Spare Space - utilising the Kohia Nelson blend directly from Freestyle Hops in NZ. A meticulously curated blend of Nelson Sauvin and Rakau, along with New Zealand passionfruit, this hop when used as generously on the cold side as we have here, positively bursts with sticky passionfruit and fresh squeezed orange juice notes. Backed up with separate T90 additions of both hops, this amazing pale ale is backed up with a little bit of zingy gooseberry, alongside apricot and an undercurrent of pine to make this pale ale outrageously drinkable at 4.1%

Driftwalker - India Pale Ale 6.4%

INDIA PALE ALE | 6.4% | EGGERS SPECIAL, MOTUEKA, RAKAU - We’ve been pretty enamoured with our sudden free accessibility to the best hops New Zealand has to offer and in our opinion it’s making our beers all the more better for it. With greater flexibility across our hop contracts, this means we can work with so many more of the most exciting producers on the planet, and this is on full display in Driftwalker. Fancy a little bit of Motueka? Sure, we could absolutely go for that mojito vibe of fresh muddled limes with brown sugar. How about a lashing of Rakau? Bring us that entire orchard of peach, apricot and passionfruit! Finish things off with new darling hop Eggers Special? Well it wouldn’t be a Polly’s IPA without some pink grapefruit, mango and sherbert. A monumental tribute to the very best our friends in the South Pacific have to offer, and an instant favourite amongst the staff here at Polly’s HQ.

Covalent Bond [Polly's x Loughran Hops] - Pale Ale 4.4%

PALE ALE | 4.4% | ELANI, STRATA, VISTA - The connection we have to the very people who allow us to produce the beers we do here at Polly’s runs super deep. It’s a lot more than just transactional with our ingredient suppliers; we like to know the hops, the malt, and yeast we utilise in each and every one of our beers has good people behind it, which was the genesis of Covalent Bond - a series we hope to grow and release regularly to showcase the excellent people behind the excellent people who make our beers. Being in town for one of the biggest trade events of the year meant we couldn’t help but reach out to the wonderful Loughran Brewer’s Select, who have been responsible for some of the best hops arriving from Crosby Farms in the US, and Hop Revolution in New Zealand in recent months. With a whole truckload of the freshest Elani, Strata and Vista directly from the source, we’ve carefully created the freshest fruit-forward pale ale we possibly can; dripping with white peach, orange zest, guava and a just a whisper of slick, dank cannabis smoke.

Nolo Light - India Pale Ale 6.0%

INDIA PALE ALE | 6.0% | SUPERDELIC - It feels as though there’s a new hype hop that lands on our radars almost weekly here at Polly’s and we absolutely live for it. With hop farming as progressive as it’s ever been, there has literally never been a better time to be a hop-forward brewery and we’re honoured to be part of a community that is lucky enough to work with the products the best producers are creating year on year. Superdelic is the latest to have landed on our radar and if a hop could check every box then this would be it. From the wizards at NZ Hops, this variety was concentrated and carefully bred over the course of literally years to express only the most potent sweet fruit characteristics; specifically raspberries, sweet candy and overripe mango. What better to execute this incredible hop in then than a straight up, all out Polly’s IPA? Delicious from start to finish.

Wavy Blue - Pale Ale 4.7%

PALE ALE | 4.7% | MEGA MOTUEKA, WAI-ITI, RAKAU - The clocks have leapt forward, the nights are drawing out, so it must mean only one thing - beer garden weather is firmly in the pipeline. Those hazy sun-soaked evenings where it’s warm enough to wear a light-jacket, or heaven forbid a tshirt, and good times are shared with pals over the course of several smashable pints. We’ve specifically designed Wavy Blue with this situation in mind, and brought in the expertise of three separate hop merchants to select their favourite cold side NZ hops to create a definitive beer garden beer. First up is an in house favourite Rakau, bringing intense fresh apricot, stonefruit and passionfruit notes to the party. Second, an infrequent visitor to Polly’s, but one we relish to work with whenever we get the opportunity in Wai-Iti, and with it a metric tonne of pithy lime citrus notes, before a final flourish of Mega Motueka - a blend born from collaboration beween Freestyle Hops and Phantasm to create the most sun-drenched, tropical burst of flavour they possibly can. The result? An easy drinking pale ale that is perfectly crushable and fully tuned into the longer evenings ahead.

Fashion Tape - Pale Ale 5.2%

PALE ALE | 5.2% | IDAHO 7, IDAHO 7 CGX, NELSON SAUVIN - Much like the experimentation with T90 and Cryo hops our head brewer Joe is tasking himself with that yielded results on Decode, so too is he working his wonders with standard T90 hop pellets alongside their CGX versions to boot. A product of Crosby Hops, with whom we were very lucky to have participated in a sensory analysis with during a recent visit to the UK, their cryogenic separation technique is typically done over a longer time to create much softer, and with that much more potent hop pellets for us to utilise in our beers. Idaho 7 T90 and CGX are on display here, with all of those vibrant pineapple, sticky pine, and overripe stonefruit notes coming to the fore. Backed up with a healthy addition of NZ titan Nelson Sauvin, this final flourish of a dry-hop charge adds some zippy gooseberry and white grape to add some balance to this amazing pale ale.

Broken Sideways - India Pale Ale 6.2%

INDIA PALE ALE | 6.2% | MOSAIC, MOTUEKA, NECTARON, STRATA - We say it pretty often here at Polly’s, but we don’t half count ourselves lucky that we’re able to access some of the most groundbreaking and influential hop varieties in the world today - a journey that began eight years ago is still bearing fruit, and our intention to push our brewing expertise as hard and as far as we can never relents. Broken Sideways showcases both our ability to get a hold of some of the most unique flavour-intense hops, as well as our meticulous craft in knowing just how much to dose each beer with in order to bring out those nuances in flavour from each wonderfully unique ingredient. Motueka leads the charge on this beer, a bright, punchy blast of NZ citrus that only the hop farmers of the South Pacific are able to produce, before a dry-hop charge of another NZ titan in Nectaron brings intense pineapple, peach and passionfruit, followed by equal parts Mosaic and Strata bring complex tangerine, strawberry and cannabis smoke dankness.

Toolbox Red - Hoppy Red Ale 6.0%

HOPPY RED ALE | 6.0% | MOSAIC LUPOMAX, STRATA, MOSAIC, CITRA - There was just something about growing up as beer drinkers as the craft beer movement was growing. Being in that moment where everything was new and shiny and exciting, queues around the corner from a bottleshop for the latest hype release, texts from mates to say a first pour was happening and you simply had to get back into town to try it, you just had to be there to truly appreciate it. Whilst craft beer has grown up and (whisper it quietly) joined the mainstream, we wanted to harken back to those days where there was a genuine excitement about new styles and techniques brewers were employing to poke their heads above the crowd. Toolbox Red is our callback to the wonderful simplicity, but tremendous complexity of the Red Ale; a style that seems to have fallen from the radar in more recent years of haze craze. Half a foot in the new school with two types of Mosaic hop, along with Strata and Citra make this a beautiful love letter to the old school with an eye on nostalgia
