Jackson Farms have been a revelation since they first landed on people’s radars with a now in-house favourite here at Polly’s with Idaho 7. We’ve used their experimental variety ID-158, nicknamed PINK before now in the awesome Velvet Motion earlier this year, but with It’s Not Enough we’re intentionally leaning into those softer flavour profiles. How are we doing this? Pair that hop with another favourite at Polly’s – the Hop Breeding Company’s experimental HBC-586, recently renamed Krush. The result is a pale ale positively dripping with the fruit forward and sweet characteristics of both of these awesome hops – think mango, guava, honey-dipped peaches, fresh sun-kissed strawberries, and a hint of vanilla. Balanced with a hot side addition of a lifeblood hop in Citra to impart a mellow citrus rind bitterness, this is a pale ale that packs a punch way above its station
