INDIA PALE ALE | 5.6% | CITRA, GALAXY, MOSAIC, SIMCOE - Our flagship core beer - the style we're most well known for, and what we do best. Rosebud is an IPA in the New England style - the most popular variant of the style in the world. We've hopped this beer with Citra, Galaxy, Mosaic and Simcoe to create a certified tropical punchbowl of flavour. Strong enough to retain all that incredible mouthfeel, but sessionable enough to smash pints of.

INDIA PALE ALE | 6.6% | EL DORADO, SIMCOE - The original underrated dark horse of the original three and back permanently as part of our Icons range; Patternist has gained and continues to carry its own massive cult following thanks to it's no frills El Dorado and Simcoe hop bill, albeit hopped up to the absolute nines, and its ornate tiling artwork garnering amazing feedback. A favourite among the staff here at Polly's, and the beer from the original three that started it all that we've brewed the most since we launched our Augment range, expect all kinds of mango, pineapple, jelly tots (no, really) with just a hint of resinous pine bursting from this incredible IPA. A hit when we first brewed it, and a surefire hit again with all the techniques we continue to learn since.

INDIA PALE ALE | 7.2% | AZACCA, CITRA, SIMCOE - Spur has always been a massive in-house favourite here at Polly's, and the proof is in the pudding - the hop bill of Azacca, Citra and Simcoe bounces with Um-Bongo levels of tropical flavour, featuring a full on fruit salad of papaya, peach, tangerine and mango on both the nose and flavour. The scrappy medium child of the original Augment trio - a nightmare to can on its first go round in 2019 on the back of how highly hopped it was - we've tamed this awesome beast and brought it into our Icons range as a permanent fixture. Slathered with our bespoke in-house LA3 yeast culture for massive hop suspension, this is a beer that is 100% hazy, dank, and juicy. Spur, it's good to have you back for good.

INDIA PALE ALE | 6.0% | CITRA, GALAXY, SIMCOE CRYO - We’re pretty familiar with the trio of Citra, Galaxy and Simcoe at this point here at Polly’s - so much so that they’re probably firmly set in stone as foundation hops that have helped build us to where we are today as an eight year old brewery. How do you breathe new life into a combo that has carried us through such a long period of time though? Tap into the resources you have, and sweet talk your hop merchant is what you do! Break on Through brings the usual T90 punch from Citra and Galaxy, but with a flourish of Cryo Simcoe - an ultra potent and concentrated version of one of our favourite hops, bringing a fruit salad of bright guava, pineapple and passionfruit, with soft notes of apricot and peach, before balancing out with a deep earthy resinous bitterness for balance.

DOUBLE IPA | 8.4% | CITRA, EKUANOT, GALAXY, MOSAIC, SIMCOE - Back for good as part of our Icons range, if Galaxy Mosaic IPA was the beer that set off some rumbles for us, then Rosa was the beer that smashed through the glass ceiling and planted us firmly on the map. Gaining near-universal praise from drinkers and industry insiders when we first brewed it in 2019 for our UK-wide Augment launch, for all the incredible places our Augment range has branched off into since then, we love coming back to what we feel is the benchmark for our DIPAs, and our brewers certainly get giddy with excitement when they know our headline beer is back on the brew plans. Featuring a five-hop mega line up of Simcoe, Galaxy, Mosaic, Citra and Ekuanot, this beer is sticky, juicy, piney and dank - 100% Polly's.

INDIA PALE ALE | 6.8% | IDAHO 7, MOSAIC, SIMCOE, STRATA - It’s a given that the first thing we reach for after a long day at the brewery is a super crushable pale ale above all else. We’re never ones to compromise on flavour intensity despite a beer being a little more reasonable on the ABV and Street Rod perfectly encapsulates this policy to a T. Bringing a wonderful mishmash of hops that have been standouts throughout both our own brewing journey as well as those of the brewers before us, we’ve charged this little ripper of a beer with Amarillo for bright, punchy orange notes, alongside another US titan in Mosaic for more complex tangerine, berry and bubblegum before a final flourish of new school NZ behemoth Moutere brings ripe passionfruit with grapefruit and underlying resinous pine, earthy spiciness and floral notes for balance.

INDIA PALE ALE | 6.1% | GALAXY, MOSAIC, SIMCOE - It feels like there's always an overwhelming sense of irony whenever we release this beer, and the most recent iteration seems to be keeping that theme going strong. When we set out with the recipe for Everything Works Again, we decided on a three way dance of modern beer's best varietals, so what better to go for than a triple threat of ultra hype hops Galaxy, Mosaic, and Simcoe? Calling back to that first IPA that put us firmly on the map back in 2018, this beer - named for an ism in the brewery when we finally sorted out the electrics in the brewhouse, and put an end to months of our brewkit shorting out mid-brew - takes the foundations laid by that OG Polly's beer and brings it roaring into 2025. Juicy, dank, hazy, and everything we love about modern British beer.

INDIA PALE ALE | 6.5% | STRATA, TALUS, CITRA - After the hullabaloo and chasm of commotion to the brewery that is our Birthday Beers across all avenues of the brewery, February is a time we often find a heavy press of the reset button is actioned, we take a deep breath, and evaluate where we’re at from a production standpoint. That doesn’t mean we’re any less inclined to keep releasing banger after banger however, and Ghost Stock continues the running start to the year we’ve made with a beautifully balanced IPA that drips with ultra-ripe passionfruit, strawberries, creamy coconut and stonfruit notes, balanced by a whisper of underlying resinous bitterness thanks to a generous lashing of Citra and Talus, and that dank cannabis smoke that only a beer hopped with Strata could bring. 

DOUBLE IPA | 8.0% | IDAHO 7, MOSAIC, IDAHO 7 CGX, MOSAIC LUPOMAX - Our birthday beers were a statement that Polly’s were coming back for their hype credentials in 2026, and Like the Skyline is our continuation of that statement into our general releases. A tropical orchard punch of a beer, we’ve hybridised techniques picked up from two of our birthday beers and combined them into this silky, pillowy DIPA. Idaho 7 and Mosaic are a tried and tested combination that we know works here at Polly’s, but why not introduce not only the classic T90 pellets, but their CGX versions to boot - dry-hopped at a slightly warmer temperature to release and encourage all those desirable hop characteristics we love so much. The resulting DIPA is already an in-house favourite amongst the team, our owner Sean noting it as a particular highlight of recent releases.
