INDIA PALE ALE | 6.3% | NECTARON, SIMCOE, MOSAIC - Mosaic and Simcoe is a pretty solid combination that has followed us throughout our entire brewing history here at Polly’s. From the very first DDH IPA we produced under the Originals banner and took to 2018’s Little Summer Beer Bash, to certified fan classics in Goldroom and Omen Roam from our Augment range, it’s just a combination that has and always will absolutely slap. How do you advance on such a behemoth combination though? Why not make it a three way dance with our new brewing darling Nectaron? Ending up with one of the best IPAs we’ve ever brewed, we always said Mosaic and Simcoe was like Lilt for grownups; Nectaron, Mosaic and Simcoe is like Um Bongo for the cool kids who smoke behind the bike sheds. Straight up dripping with tangerine, berry, passionfruit, peach and mangosteen, with a refined piney bitterness running through to keep everything in check. Insanely good.

INDIA PALE ALE | 6.8% | IDAHO 7, MOSAIC, SIMCOE, STRATA - It’s a given that the first thing we reach for after a long day at the brewery is a super crushable pale ale above all else. We’re never ones to compromise on flavour intensity despite a beer being a little more reasonable on the ABV and Street Rod perfectly encapsulates this policy to a T. Bringing a wonderful mishmash of hops that have been standouts throughout both our own brewing journey as well as those of the brewers before us, we’ve charged this little ripper of a beer with Amarillo for bright, punchy orange notes, alongside another US titan in Mosaic for more complex tangerine, berry and bubblegum before a final flourish of new school NZ behemoth Moutere brings ripe passionfruit with grapefruit and underlying resinous pine, earthy spiciness and floral notes for balance.

IMPERIAL WELSH ALE | 7.0% | BLACK TEA, CURRANTS, RAISIN, MIXED SPICE - We’re never ones to shy away from our heritage here at Polly’s. As a Welsh brewery with St Davids Day on the horizon, it would be remiss of us to not lean into our roots and brew something for the occasion. The very type of thing our pilot kit was brought in for, we’ve set our sights on the Welsh cultural icon bara brith, and put our brewing knowledge to the test to create an imperial Welsh ale, dosed with black tea, raisins and mixed baking spices to create liquid bread, and a wonderful deviation from our usual well-beaten path of pale and hoppy

PALE ALE | 4.3% | MOUTERE, AMARILLO, MOSAIC - Slap it on our chest, brand us with it, we’re settling more and more into our status as a modern day UK juice slinger. What do you do then when you have a four way of some of the most hype-heavy hops free to use with gay abandon in a beer? You go full Polly’s hog and create a full-on, maxed out, amped up modern hop-forward IPA that even before its release is being renowned in the brewhouse as one of the best beers we’ve ever brewed. With a hop bill representing three of the most renowned hop-producing countries on the planet, we’ve brought an all-US lineup of Idaho-7, Mosaic, Simcoe and Strata to create our most pillowy soft, juicy, and tropical IPA to date. Expect passionfruit sweetness, gooseberry zing, and soft peach notes a-plenty, backed up with just a whisper of citrus rind bitterness and dank cannabis smoke in this bulldozer of a beer.

PALE ALE | 4.1% | NELSON SAUVIN BLISS - There’s a common misconception when it comes to the more sessionable pale ales; that because of the lower ABV we have to sacrifice flavour intensity, or that we use lesser hops in the more sessionable end of the brewing spectrum. This couldn’t be further from the truth and Infinite Source is a gleaming example of this in action. Fresh cropped Nelson Sauvin would be enough to qualify for this on its own, but we’re never ones to do things by half here at Polly’s. Featuring the Bliss blend exclusive to Freestyle Hops, this incredibly high-alpha variety features a blend of late and early harvested Nelson Sauvin to maximise tropical intensity, and bring all those gooseberry, lychee and grapefruit notes fully to the party. The result is a robust, dank and complex hop-forward beer that punches way above its ABV.

INDIA PALE ALE | 6.0% | CITRA, GALAXY, SIMCOE CRYO - We’re pretty familiar with the trio of Citra, Galaxy and Simcoe at this point here at Polly’s - so much so that they’re probably firmly set in stone as foundation hops that have helped build us to where we are today as an eight year old brewery. How do you breathe new life into a combo that has carried us through such a long period of time though? Tap into the resources you have, and sweet talk your hop merchant is what you do! Break on Through brings the usual T90 punch from Citra and Galaxy, but with a flourish of Cryo Simcoe - an ultra potent and concentrated version of one of our favourite hops, bringing a fruit salad of bright guava, pineapple and passionfruit, with soft notes of apricot and peach, before balancing out with a deep earthy resinous bitterness for balance.
