BALTIC PORTER | 8.0% | CACAO NIBS - A strong core belief that we hold here at Polly’s is that although we’ll always be flagbearers for pale and hoppy beers, we know we’ll never be the best brewery in the world if we can’t produce more than just the beers from our trusted and well-trodden path. With a short throttle back in the brew plans considered, we found we had a little bit of extra tank time for our beers, and with that the idea of putting a baltic porter into our plans. A curious style that has long evaded us until now, we really loved the idea of lagering a strong, dark beer to create something that drinks much smoother and crisper than the dark beers we’d done before. Resting fresh cacao nibs on this beer for an extra level of complexity, Sable is everything we love about an imperial stout but in a much more accessible package. Perfect for bridging winter into spring and warming ourselves up with on those colder evenings we can still catch at this time of year.

INDIA PALE ALE | 6.2% | MOSAIC, MOTUEKA, NECTARON, STRATA - We say it pretty often here at Polly’s, but we don’t half count ourselves lucky that we’re able to access some of the most groundbreaking and influential hop varieties in the world today - a journey that began eight years ago is still bearing fruit, and our intention to push our brewing expertise as hard and as far as we can never relents. Broken Sideways showcases both our ability to get a hold of some of the most unique flavour-intense hops, as well as our meticulous craft in knowing just how much to dose each beer with in order to bring out those nuances in flavour from each wonderfully unique ingredient. Motueka leads the charge on this beer, a bright, punchy blast of NZ citrus that only the hop farmers of the South Pacific are able to produce, before a dry-hop charge of another NZ titan in Nectaron brings intense pineapple, peach and passionfruit, followed by equal parts Mosaic and Strata bring complex tangerine, strawberry and cannabis smoke dankness.

PALE ALE | 5.3% | PINK, SIMCOE, SIMCOE CRYO - We’ve got a pretty good working relationship with our hop merchants, but it certainly doesn’t harm every now and again to do a little shakedown with our reps to see what the latest experimental hops coming out of the farms are. When we learned about ID-158, dubbed “PINK” after its distinctive trial markers in the field, we were immediately curious and charmed. Bringing all the usual intense citrus and stonefruit flavours we’d expect from Jackson Farms over in Idaho, but with an undercurrent of honey, jazz apple and vanilla, we clamoured to get this incredible sounding hop into a beer, and Velvet Motion is the result. Conscious that it might lean too heavily into the overly sweet territory, we’ve dosed this beer with not only T90 Simcoe, but Cryo Simcoe to boot to bring the balance with just a whisper of pine and pithy citrus rind, but enough apricot and passionfruit to act as a compliment to this incredible experimental hop.

OATCREAM IPA | 6.1% | VANILLA, LACTOSE, EL DORADO, TALUS - We’re really taking our Oat Cream beers seriously this year. Like, really seriously. After an initial trial throughout the back end of 2025 that yielded some of the best beers we’ve ever produced, we’re going headfirst into our first full year producing these incredible beers that have a firm nod to the American haze craze brewers that inspired us to brew in the first place, with a thoroughly Polly’s twist. Valiant Deeds takes the concept and runs with it with gusto. A higher than usual amount of oats in the grist brings a delightful fluffiness to the mouthfeel of this beer, backed up with freshly scraped madagascan vanilla and a dose of lactose to bring up the sweetness to juuuust the right amount, before a dry-hop bill of in-house favourites El Dorado and Talus impart jelly-tots, pear drops, pink grapefruit and just a hint of herbal complexity to complete this banger of an IPA

PALE ALE | 4.5% | KRUSH! - It wouldn’t be Floret Day without a twist on the original recipe now would it? After amplifying the recipe up last year for a balls-to-the-wall DIPA version of our flagship pale, we’ve taken stock of what people are looking for in 2026 and have brought the ABV back down again, honouring Floret’s original ABV of 4.5% back when we first released it in 2022, but with a hearty lashing of one of our new favourite hops to work with here at Polly’s; the world-renowned Krush. Selected specifically for its tendency to impart a noticeable fruit cocktail kind of vibe to our beers, we’ve very intentionally gone with this hop alongside its classic Citra, Simcoe and Azacca bill to create a fruit crush of a pale ale, melding sweet fruits, berries, and a whole load of freshly squeezed oranges to create a banger twist on our flagship for 2026. PALE ALE | 5.6% | CRYO POP, CITRA - Cryo Pop is a blend that we’ve used sparingly across our history here at Polly’s, but for no other reason than it being a variety so difficult to get our hands on previously. Formerly known as trial blend TRI2304CR, this supercharged melding of technology unique to our hop merchant Yakima Chief really showcases why they’re one of the world leaders in the latest techniques, tricks, and advancements that make brewing beer so exciting in the modern day. Equipped with full gusto on Replicant Dreams and backed up with a cornerstone hop from our brewing journey in Citra, this pale ale bursts with daquiri-like notes, with juicy peach, pineapple and stonefruit to boot.
