Cultured Left Foot starts brightly and never looks back - a pale ale packed with tropical fruit, citrus zest and a finish as composed as you like, this beer has pace to burn and knows exactly where the goal is. Like any great tournament team, it’s built on a solid foundation, with a safe pair of hands in our hazy pale ale grist bringing a biscuit sweetness, with a pillowy fluffiness from the heavy use of oats. With a double pivot of Citra and Idaho 7 running things in the engine room, this beer has a subtle but headstrong bitterness that dictates the tempo before the big lad Mosaic knocks it down to the pacey Simcoe for a clinical finish of bright and zesty orange, stonefruit and blueberries. A team performance that leaves everything out there on the pitch; take a bow son. Take. A. Bow.

Surrealistic - DDH Pale Ale 5.3% × 2

DDH PALE ALE | 5.3% | CITRA (DYNABOOST, PRYSMA, CRYO, LUPOMAX) - We’ve always been big fans of a single hop showcase here at Polly’s, but showcasing those hops in just pellet form is so 2018. These days we’re leaning into the incredible working relationship we have with our hop suppliers and the hard work our head brewer Joe has been putting in to bring every bit of diversity available across a certain hop variety into a single hop beer. Surrealistic, namechecked for how much we have to pinch ourselves that this little brewery in North Wales has come so far in eight years, brings four different types of a cornerstone hop in Citra to the party on a single beer. Cryo and Lupomax bring pelletised but ultra potent hop flavours, before liquid additions in Prysma and Dynaboost elevate those intense flavour compounds to the max. An absolutely insane amount of bright, punchy grapefruit, fresh orange, and muddled limes are dancing in tandem on this maxed out pale ale.

Glass Towers - Oatcream Pale 5.6% [LACTOSE] × 2

OATCREAM PALE | 5.6% | DOLCITA (PRYSMA, CRYO, LUPOMAX), LACTOSE - When it comes to those incredible Oat Cream beers we’ve spent the last twelve months developing and advancing from our taproom to commercial release, it’s all about utilising the hop varieties that pair best with the soft, fluffy and sweet mouthfeel that sets the base of this rapidly growing arm to our brewing journey. It’s safe to say Dolcita has firmly settled itself as a staff favourite here at Polly’s, and the peach rings, caramlised pineapple and creamy coconut notes are straight up built for use in an Oat Cream beer. Utilised in its Cryo, Lupomax and Prysma form, this beer is positively bursting at the seams with all those incredible flavour notes laid on top of a pillowy Polly’s pale ale.

Silent Pulse - Pale Ale 4.5% × 2

PALE ALE | 4.5% | AUDACIA, MERIDIAN, CITRA LUPOMAX - We’ve mentioned it before but our relationship with our hop supplier has never been more positive than it is in 2026 - our accessibility to hops we might not necessarily have been able to utilise is better than ever and we wanted to explore some more off-the-beaten track varieties on Silent Pulse, all the while maintaining that drinkability and signature Polly’s vibe that keeps our fans coming back for more. With this beer we’re bringing two new hops, Audacia and Meridian to the party - the former described as a “sassy noble” hop, and the latter discovered completely by accident from the same hop farm, Indie Hops in Oregon. Bringing something a little different in the flavour profile, these hops utilised in tandem burst with boysenberry, huckleberry, blackcurrant and pomegranate notes, before a hearty helping of Citra Lupomax brings those bright, punchy citrus notes that are a signature of our beers to finish.

Block Drift - India Pale Ale 6.1% × 2

BLOCK DRIFT | 6.1% | LUMINOSA, STRATA, NELSON SAUVIN - We’ve said it before, but there really is something about a Polly’s IPA that clocks in at 6.1%. Ever since those early days when we created that insane first Citra Simcoe IPA as Loka Polly, all the way through to today, we’ve lost count of how many staff favourites clock in at this ABV and there can’t be a coincidence in it. With Block Drift, we went all in with the brief and decided to go with one thing and one thing alone - the absolute freshest, hype-forward hops we could possibly pack into a beer in one go. Bags and bags of Luminosa, Strata and Nelson Sauvin are jam-packed into this IPA and it tells in the finished product - positively dripping with a metric tonne of peach-mango lemonade, candied oranges, papaya, strawberry, crushed gooseberries and just a hint of dank cannabis smoke.

BEST BITTER | 4.0% | WOLF AND DRAGON - In case anyone hadn’t already noticed, we’re big suckers for nostalgia here at Polly’s Brew Co. We’ve showcased that thirst for nostalgia by working with a brewery that has existed on our radars long before Polly’s existed, stretching back to the days in which a considerable amount of us all worked in our own bars and restaurants, serving beers from the understated but magnificent Brimstage Brewery. Quietly making some of the best cask beer we’ve had the pleasure to try, we decided to bring our collective expertise together to brew a heritage style and a celebration of our formative drinking years - Shifting Plates. Kicking it very old school and utilising full leaf Styrian hops, this beer leads with the malt to give a warm hug of nostalgia, but with a bright and pleasant fruitiness in a thoroughly modern best bitter.
