Beer is just great, isn’t it? Adaptable to so many situations – a quiet pint reading a book in the corner of a pub, a social beer with pals after work on a buzzy Friday evening – and so diverse there are literally hundreds of sub-styles that people have written books on and then some; we’re extraordinarily lucky to work with such a unique product and be able to have turned a passion into a career. As International Beer Day was just around the corner when we were populating our brew plans, we figured why the hell not celebrate the occasion with a beer off the beaten track for us here at Polly’s, and one that is fiendishly difficult to get bang on correct. A pale ale, sure, but one brighter than your standard Polly’s pale – no hiding behind hops on this one, everything has to balance just right, and in his final act before departing Polly’s after five years, our brewer Joe relished the opportunity to work with a beer that could showcase his skills – bringing new school US hop Zumo, along with neo-noble hop Lorien, and a Polly’s cornerstone in Mosaic, this pale ale is crisp, clean and ultra refreshing.
