Rosa - DIPA 8.5%

Back for good as part of our Icons range, if Galaxy Mosaic IPA was the beer that set off some rumbles for us, then Rosa was the beer that smashed through the glass ceiling and planted us firmly on the map. Gaining near-universal praise from drinkers and industry insiders when we first brewed it in 2019 for our UK-wide Augment launch, for all the incredible places our Augment range has branched off into since then, we love coming back to what we feel is the benchmark for our DIPAs, and our brewers certainly get giddy with excitement when they know our headline beer is back on the brew plans. Featuring a five-hop mega line up of Simcoe, Galaxy, Mosaic, Citra and Ekuanot, this beer is sticky, juicy, piney and dank - 100% Polly's.

Oh My... - Citra & Sabro Pale 5.8%

Our last collaboration before the 2020 lockdown with our super pals over at Big Mountain Brewing, and a surefire cult favourite takes its rightful place as the pale ale showing for our new Icons range. We've revisited this beer several times over its lifespan, and originally our first foray into using everybody's new favourite hype hop Sabro in one of our beers, we're now world-weathered in the little quirks and idiosyncrasies of this incredible varietal. Amplified up to the max, Sabro brings a metric tonne of sweet, creamy, pineapple and coconut notes before being reeled in by an in-house Polly's favourite in Citra to keep everything balanced. Named for a truly terrible George Takei impression, this beer will literally make you say "...Oh my!".

Blue Roses - Small IPA 3.2%

We’ve definitely noticed a shift in what our drinkers want over our six years as an active brewery. From those early Loka Polly hop-drenched DDH IPAs, to the peak-lockdown DIPA, TIPA and QIPA fever craze to today, there’s been a wonderful evolution of trends that have made us have to think on our feet constantly and innovate within the parameters of what our fans and drinkers are seeking in their beer. With the current shift heading toward low and no beers, we’re eager to pack that flavour profile of a typical Polly’s beer into a smaller ABV. Small IPAs were a cult style in our first year at Polly’s and we’ve brought them back with aplomb - Blue Roses takes the baton carried by those bushy tailed and bright eyed brewers and takes it firmly into 2024.

Sky Flights - Pale Ale 5.2%

Every now and again you just need to go headfirst into a beer with a single-minded plan in place. The plan for Sky Flights? Simple - straight up, freshly squeezed orange juice. How to create a boozy breakfast juice though? Say no more, and step forward the freshest crop of Amarillo paired with new-to-Polly's NZ behemoth Wai-Iti - a two hop combo simple in execution, but incredible as a pair. We've only brought a gentle addition of Amarillo to the party on this beer but boy does it bring the high-citrus notes to proceedings. Where do you go from there? Oh a heavy lashing of Wai-iti to bring a metric tonne of stonefruit and lime splash to this beer? Sure why not. Positively dripping with citrus notes, we feel we've hit the mark with this beer and then some.

Defending Backbeat - IPA 6.5%

Very occasionally, it's nice to put our collective heads together here at HQ and just let what we're really good at and can do naturally happen with one of our beers. Not everything has to be drenched in 30g/l dry hopping rates; it's perfectly fine to have an IPA that allows the supporting cast to really show its characteristics and shine alongside the hype. A solid backbone of extra pale malt, wheat and oats lays a foundation of biscuity sweetness, before our favourite hop pairing in Polly's stalwarts Citra and Simcoe bring pineapple, honeymelon, mango and papaya juice to the table, rounding off with just a smattering of bitterness from an 80 degree whirlpool addition of Mosaic balances everything out. All kept together with our bespoke LA3 yeast strain, this is us doing exactly what we do best.

Wind Fever - Triple IPA 10%

We’re hopping firmly back aboard that hype train set off from our birthday beers and we’re making a stop in TIPA town, baby. As we rolled into the new year, our founder and MD Sean wanted to make a conscious effort to spend more time in the brewery and reconnect with what made him want to come into this game in the first place; brewing incredible beer. Wind Fever is Sean’s first solo effort back on the kit and it’s a big one - an absolutely hop drenched feat of alchemy up there with some of the best we’ve ever brewed. With a dry hop charge positively bursting at the seams pushing the 30g/l mark, we’ve absolutely loaded this beer to the nines with an Idaho 7 and Cashmere hop bill squeezing every last conceivable drop of mango, peach and apricot, backed up with earthy black tea notes for balance. Thick, soupy, and frankly a little silly - as all TIPAs ought be.
